Sanctuary of Stone and Fire music & tarantella
I recall that Wikipedia once stated vaguely that the music in the Sanctuary of Stone and Fire was "reminiscent of" tarantella folk-dance music. Is there anything to this? If so, are there any other folk music influences like that apparent in Rayman 2 music? (I'm guessing maybe not, since the Pink Floyd connection was made particularly apparent recently, but then again it's late and my mind might not be working properly at the moment…)

Hello PluMGMK, forgive me if I answer you again but I can assure that knowing well this type of italian folk-music (which in addition personally don't like, because I find them of bad taste) the tarantella has nothing to do with the style of Rayman 2's soundtrack if not a vague reminiscence to the primordial rhythms.
The Rayman 2's musical inspirations are the application of electronics to the instrumental music of Pink Floyd.
