You can select smooth Texture Mapping. it's on PlayStation Driver on the Version, so just press the triangle button to see version and choose PlayStation Driver for options. there are 2 methods to change option: Disc Speed and Texture mapping.

I'd still play GTA on my PS2 also, or even the likes of Ratchet & Clank.

I found it really bad that my PS2 wasn't working great anymore but thanks to my knowledge on getting PCSX2 to work, I can reconnect with my childhood memory games.

Despite the video cord acting up frequently, i still play the GTA, R&C and Jak trilogy (tho Jak 3 is wearing my pateince). I also have Okami, Gran Turismo 3 and Resident Evil 4. Considering switching over from the pc version to the ps2 version of rayman 2 lately as well.

Gran Turismo 3 is one of the best car games I've ever played. I played that game so much with my uncles when I was younger, and the best car for everything was the Polyphony001.
Seriously though, the PS2 probably has the best game library that any console is ever going to have.

I've been using my PS2 to play Final Fantasy 7 lately. I have Ty 1 and 2 to play also after I finish it. There are a lot of PS2 games I want to get.

Do you think Sony will re-release their second hardware? I mean successor of PlayStation One classic edition? Or will Insomniac Games make multiplayer game mode to Ratchet and Clank 2 remake?

Normally they release the classic edition consoles as emulators, so it would need to be fairly powerful to properly emulate a PS2. It would be nice though if they made one and released it as an FPGA so it'd be pretty close to the real hardware.

Metal Gear Solid 2 baby! That game is still one of my all time favorites for the PS2. Definitely won’t be ditching the system any time soon.

I might play Shin Megami Tensei: Nocturne/Lucifer's Call or Persona 3 FES. I kept buying PS2 games and never ended up playing them so I have too many to play.

Recently completed a run of Jak 3 on PS2, still a fun game but I think the desert car controls are a lot more annoying than I remembered. They've discovered a cheat mode about 2-3 years ago, had a bit of fun playing with that as well.
Man it's weird using a DualShock 2 these days though, it's not the most comfy compared to the DualShock 4 I'm used to now.

I'm going to get a HDD for my PS2 and rip my games to ISO and save them onto it to preserve the discs.

Yeah this is a good idea. There's a cheaper knock-off version of the network adapter that doesn't have an Ethernet port, but you can still install games to the HDD from the discs. If you get the official one that has the Ethernet port, you can FTP to the HDD from your computer, which can come in handy too.
I plan to get the SATA adapter for mine instead of having to use an ancient IDE HDD.
